With a little extra attention, your everyday meals can be enriched with precious vitamins. All you have to do is treat your foods well. For example, don’t leave vegetables in the refrigerator too long because they lose vitamin C, which is a substance that dissipates with heat as well as light. The B-group vitamins are hydro soluble, and therefore they end up in the water you cook your vegetables in. Avoid boiling your vegetables. Try adopting shorter cooking methods such as steam.
