Recently, interesting molecules such as hydroxytyrosol (3,4-dihydroxyphenylethanol), a powerful antioxidant that has been shown to inhibit oxidation of LDL lipoproteins and neutralize free radicals, have been isolated. For these reasons, hydroxytyrosol can make “bad” cholesterol, which damages arteries, less aggressive.
