Crauti al cumino

Cabbage and horseradish are rich in isothiocyanates, but only when raw. When you cook them, their smell (and benefits) evaporate. So how about trying them raw. Not used to it? Here is a simple recipe that makes them very easy to digest. Chop a few hundred grams of sauerkraut finely, then mix with a pinch of salt, half a teaspoon of cumin seeds and, if you fancy it, a few juniper berries. Add a few drops of vinegar and marinate for half an hour. Before eating, season with some extra virgin olive oil.
