Salad with kiwi and dates

Preparation: 15 minutes Cooking: . Doses for: 3-4 people


100 g baby spinach
100 g rocket
300 g small mozzarella
4 kiwi gold
10 dates
2 table spoons of sunflower seeds

For the sauce
4 tablespoons of oil
1 tablespoon of lemon juice
2 teaspoons of mustard
1 tip of grated ginger
salt and pepper

Pit the dates and soak them in hot water while you prepare the rest, so that they soften. In a non-stick pan, toast the sunflower seeds. Wash and dry the baby spinach and rocket, peel and slice the kiwis, drain the mozzarella.
Prepare the sauce by combining all the ingredients in a bowl and mix with a whisk or fork to create a creamy sauce, taste it and adjust if necessary.
Toss the rocket with the baby spinach, mozzarella, kiwi and dates and season thoroughly with the sauce, then serve with the sunflower seeds.
