
Biscottini alle nocciole e agrumi profumati al timo

160 g spelt flour
80 g roasted hazelnuts
100 ml orange honey
60 ml light oil (corn, sunflower or light olive oil)
1 pinch of bicarbonate
1 unwaxed lemon
1 untreated orange
some sprigs of thyme
The preparation
Chop the hazelnuts finely without reaching the flour consistency, mix with the spelt flour and bicarbonate. Add the grated citrus rind, the thyme leaves and then the honey and start to mix adding also the oil to get a soft but compact consistency. Make some small balls rolling them in the palm of your hand, flatten them slightly and place on a tray covered with greaseproof paper, well spaced because they will rise and expand during cooking. Bake at 180°C for about ten minutes (take them out of the oven when the sides start becoming golden brown).
